Tucked away in the beautifully restored Ebenezer chapel in Dempsey Hill, The White Rabbit, which boasts an al fresco gin bar, The Rabbit Hole, was the site of our recent gin masterclass. The evening session, helmed by Joshua Baxter, group beverage manager of The Lo & Behold Group, who leads the bar teams across the group’s 13 venues, and Edwin Kho, bar supervisor at The White Rabbit, took six of our readers through an enriching session focused on craft gin appreciation.
Our guests Beatrice Goh, Hurwitz Joo, David Seow, Geh Si Wei, Lim Wei De and Raymond Raphael Tan gleaned insights into gin-making, learnt about gin’s background and its storied history, examined the types of botanicals used, and observed an actual copper pot distillation right at the bar.
