3 ripe tomatoes 2 tbsp olive oil ½ pepper, deseeded and sliced 3 spring onions, sliced 1 green jalapeño chilli, sliced ½ garlic clove, crushed ¼ tsp ground cumin ¼ tsp paprika ½ tbsp dried oregano A pinch of sugar 80g feta cheese, crumbled 3 eggs, whisked Handful of mixed green herbs, such as flat-leaf parsley, coriander, dill and mint, all roughly torn ¼ red onion, very thinly sliced FOR THE CROUTONS:
