Timothy d’Offay of Postcard Teas has developed Ambient Tea, made for pairing with fine foods, and serving in stemware. It is infused at room temperature, capturing more facets of the leaves’ flavours than a cold brew, while displaying the balance of a hot brew. For us, d’Offay created two blends: London Sun, a roasted black tea with a sweet, nutty chocolate flavour, which pairs with meats and smoked fish; and High Green, a blend of Darjeeling and Taiwanese tea with elderflower and tropical fruit notes, which pairs with white meats, fish, salads and cheese.
