ALMOND PROFITEROLES Makes about 50 profiteroles 2 cups plus 1 tablespoon water, divided 1 cup unsalted butter, cut into cubes 1 teaspoon vanilla paste 2 cups all-purpose flour ½ teaspoon salt 9 eggs, divided 1 tablespoon firmly packed light brown sugar 2 tablespoons chopped toasted almonds 1 recipe Tropical Green Tea Pastry Cream (recipe follows) 1. Preheat oven to 400°. 2. In a medium saucepan over medium heat, bring 2 cups water, butter, and vanilla paste to a boil.
