When we think of pasta, we think of Italy, but Argentina has also developed its own pasta culture that has sprung from the Genovese roots of so many of its earliest settlers. In Buenos Aires they make ‘sorrentina’, which are like ravioli with tomato and stringy mozzarella sauce. They also make their own ‘ñoquis’.
