Who doesn’t love a festive wreath at Christmas? Make that a deliciously edible meringue, topped with berries and cream and a smattering of flowers, freshly foraged from the garden, and voila! Decadent dessert sorted. But it doesn’t stop there. Our final, and utterly fabulous, issue for 2017 is jam-packed with celebratory ideas – be it a casual gathering or a full glitter and sequin affair that requires planning and polishing and a special occasion to bust out the top-shelf tableware. Cauliflower Cheese and Thyme Arancini I have been making different variations of arancini for many years now and this flavour combination is one of my favourites. No-one can resist the oozing cheesy centre and when served with aioli on fresh thyme they look pretty as a picture. 41/2 cups chicken or vegetable stock ½ cup cream 1 head cauliflower, chopped into very small florets sea salt and freshly ground black pepper ¼ teaspoon freshly grated nutmeg 25 grams butter 1 tablespoon olive oil 1 onion, finely chopped 2 cloves garlic, crushed 1 cup risotto rice ¼ cup white wine 1 tablespoon finely chopped thyme ½ cup grated parmesan 225 grams brie or taleggio, chilled in the freezer for a ½ hour, then chopped into 1cm cubes 4 cups breadcrumbs 3…

Xmas Cake with Spelt Flour and Molasses I love the richness that the hint of molasses brings. The wholemeal spelt flour adds a nice weight to the finished cake. My version skips nuts inside the cake itself and you can decide for yourself if you’d like to garnish the top with almonds. Pull-Apart Ham Rolls These soft and golden rolls are a great way to feed a crowd. The rolls can be made a day in advance, just keep them in an airtight container until you are ready to use. Buns 1½ cups milk, at room temperature 1½ teaspoons dried yeast 3 tablespoons sugar 1 tablespoon melted butter 1 egg, beaten 4 cups plain flour 1 tablespoon sea salt 1 egg, for egg-wash Filling 50 grams butter 1 clove of garlic, crushed 1 teaspoon wholegrain mustard 150 grams champagne ham, thinly sliced 150 grams swiss cheese, grated 12 sprigs of fresh thyme salt and ground black pepper Buns: Place the milk, yeast and sugar in a bowl and mix. As the sun shone on Christchurch, a group of lucky Dish readers were treated to an evening of delicious food and fine wine at Pescatore restaurant at The George. I love to eat cherries alone: just a brown paper bag of cherries and me, on a wooden seat in my garden, where I can tuck into them at pace and flick the stones god knows where. Or curled up in a sunny spot with just a handful of them, to luxuriate in their juicy sweet almondy taste. But I never share. If I buy a bag at the market I will have eaten most of them by the time I get home. Is there a word for a cherry addict? Harissa Roasted Salmon with Walnut Dukkah I love having one fabulous dish in the fridge, cooked and ready to garnish. It can be roasted 2 days ahead and certainly takes the pressure off when entertaining. 1 side of salmon, skin on (ours was about 1.5 kilograms) 2 tablespoons olive oil 1–2 teaspoons harissa, or more if you want a strong chilli flavour sea salt and ground pepper ½ cup roasted walnuts, roughly chopped 50 grams purchased dukkah 2 tablespoons finely chopped coriander, plus extra sprigs to serve fresh pomegranate seeds Preheat the oven to 200°C fan bake. Cherry, Orange and Ginger Trifle A trifle always says Christmas to me, as it’s usually the only time I ever make one. This is my take, using a lovely rich ginger cake, splashed with a generous amount of alcohol, layered with a cherry compote and clouds of gorgeous custard cream. Orange and ginger cake 1 cup golden syrup 1/2 cup brown sugar 1/2 cup water 80 grams butter finely grated zest 1 large orange 2 cups plain flour 1 teaspoon baking soda pinch salt 2 teaspoons ground ginger Cherry compote 680-gram jar pitted cherries and their liquid 2 tablespoons honey 1 tablespoon cornflour 1 tablespoon liqueur of choice (see below) To assemble 250ml purchased custard 300ml cream liqueur of choice for dousing and for compote: you could use an orange…

Baked Feta with Honey, Hazelnuts and Thyme Look for a creamy, rather than a firm, feta for this dish. Other nuts and herbs such as walnuts and almonds and rosemary also work well. 2 blocks creamy feta 1 tablespoon olive oil 4 tablespoons runny honey 1/3 cup roasted hazelnuts, roughly chopped 4 sprigs fresh thyme ground black pepper To serve crostini or crackers Dried Fig and Marsala Compote, recipe below Preheat the oven to 200°C. Drain the feta and blot it dry on paper towels. Brush the base of a baking dish with oil and place the feta on top. Drizzle with half the honey, then scatter over the hazelnuts and thyme sprigs. TEENAGE BREWS The Brew Moon Brewing Company just turned 15! Founded by husband and wife Kieran McCauley and Belinda Gould, it’s one of the longest-lived brew-pubs in New Zealand and now their sons, Toby and Oscar, work alongside them. Kieran and Belinda were originally inspired by the American craft brewing scene, when the family lived in California in the late 1990s. When they returned to Godzone, Belinda continued her day job as a winemaker while Kieran and original brewer Carl Hadler set up the brewery in the old Cider Garden facility just outside Amberley. 6 eggs, size 7 1½ cups caster sugar 1 teaspoon vanilla extract 1½ teaspoons lemon juice To assemble 1½ cups cream 200 grams mascarpone 1 teaspoon vanilla extract Draw a 26cm circle on a large piece of baking paper, then draw a 10cm circle inside it. Place ink-side down on a large, greased flat baking tray. Preheat the oven to 130°C (not fan bake). Whisk the egg whites to soft peaks then gradually beat in the sugar, 2 tablespoons at a time. Keep whisking until the sugar has dissolved and the meringue is thick and glossy. Add the vanilla and lemon juice and beat for 2 minutes.
