In a food processor put 4 tsp allspice berries, toasted, ½ cinnamon stick, broken into shards and toasted, 3 tsp coriander seeds, toasted, 4 tsp fresh thyme leaves, 4 spring onions, roughly chopped, ½-1 Scotch bonnet pepper (or small red chilli), deseeded if you want less heat, 5 garlic cloves, 1 tsp grated nutmeg, 3 tbsp demerara sugar, the juice of 1 lime, ½ tsp soy sauce and 2 tsp sunflower oil.
