I know how to deal with the dishes (glasses first, roasting pan last) and I also know how I’m supposed to deal with the leftovers. I am, of course, duty-bound to love them, store them, repurpose them, celebrate them. Everywhere the modern cook turns, there are helpful food waste campaigns, closed-loop chefs and, in my case and perhaps in yours, high-ranking family members brandishing ramekins and beeswax wraps.
The pressure is subtle but persistent, and failure to comply can cause significant kitchen guilt, even in the many households that, like mine, have access to a special caddy for food waste collection.
