“This flavour-rich cod will make your skin glow” Roasted Cod WITH CHARRED COURGETTES AND PEPPERS INGREDIENTS • 2 x 150 g cod fillets• 2 courgettes• 2 red peppers• 2 tbsp avocado oil or olive oil• Grated zest and juice of 1 lemon FOR THE MARINADE • 2 tbsp chopped fresh coriander• 1 garlic clove, crushed• 1 tsp tomato concentrate• 1 tsp apple cider vinegar• 1 tsp freshly grated ginger• 1 tbsp tamari• pinch allspice METHOD 1 Make the marinade by combining all the ingredients.
