I’ve come to realize that you have to be a tea lover to understand why drinking it hot during summer is so enjoyable. While iced tea is certainly nice, I find a cup of hot tea to be soothing, relaxing, and refreshing regardless of the season or the weather. Macadamia-Coconut Scones Yield: 10 ¾ cup plus 2 tablespoons canned coconut milk 1 vanilla bean pod, split, scraped, and seeds reserved ¼ teaspoon coconut extract 2 cups all-purpose flour 1/3 cup organic granulated cane sugar 2 teaspoons baking powder ½ teaspoon salt 4 tablespoons cold unsalted butter, cut in pieces 1/3 cup unsweetened shredded coconut, such as Bob’s Red Mill 1/3 cup chopped salted macadamia nuts 1 large egg white, lightly beaten Garnish: additional organic granulated cane sugar • In a small saucepan, heat coconut milk over medium-high heat, whisking until fat layer is combined. This fourth article about the Chitra Collection discusses how the porcelain industry developed in Europe; some of the techniques, styles, and decorations employed by the various ceramic manufacturers; and what we can learn about tea drinking in Europe at that time. When Trish Stubbs, pictured right, opened Tilly Mint’s in 2007, she created a setting that honored her family’s British heritage with various memorabilia and knickknacks arranged around the tearoom. The name Tilly Mint’s Tea Room might come across as a whimsical ploy to pique the interest of customers, but for her business, owner Trish Stubbs wanted to use a moniker that was an important part of her childhood. The first member of her family born in the United States, Trish grew up in a very British household in Pennsylvania. As a college music student, I wore the grooves off the vinyl listening to their recordings that featured tight harmonies with jazzed-up rhythms.
