Get your fix of gooey chocolate in mere minutes with a Kmart pie maker. Place 180g chopped dark chocolate (70% cocoa) and 150g chopped unsalted butter in a saucepan over medium-low heat. The logic of the combination of pork and apples is undeniable. Despite its history, there’s no reason why you can’t swap apples for pears. Add spicy pineapple ketchup and it’s even better. For me, roasts are not complete without the right, often fruity, accompaniments – mint jelly with lamb, horseradish with beef, duck with cherries, venison with a Cumberland sauce of redcurrant jelly and orange, roast chicken with bread sauce. brazil nuts vs peanuts Brazil nuts have around 20 per cent more calories than peanuts and almost 50 per cent more fat (mainly mono- and polyunsaturated fats), but with those extra cals come over 75 times the selenium, three times the calcium and more zinc. Peanuts have almost twice the protein and vitamin E, as well as more than 10 times the folate. They do, however, have more than twice the natural sugars, so brazil nuts win if you’re on an ultra low carb diet. Ultimately, both are healthy options and variety is your best bet. tip 1 Pork rashers are the perfect pre-cut thickness for the long crackling croutons. I love to eat pappardelle - it means “to gobble” in Italian. this would have to be a weakness of mine – when I see ragu on a menu I always order it. Winter is the greatest time to make and enjoy a hearty ragu, especially as night falls and the excitement of gobbling up the stew grows! Slow-cooking the lamb shoulder over a low heat makes the meat super soft and tender. I added a touch of pancetta for smokiness and saltiness, and red wine brings richness to the sauce. You can serve this on any pasta, but, as you now know, my favourite is pappardelle – the soft, thick ribbons can support the lamb and soak up loads of sauce. This dish freezes well.
