BRAISED LAMB  with potato cornichorn, onion confit & red wine jus Get these 880 gm lamb shanks, 80 ml olive oil, 60 gm chopped garlic, salt to taste, 20 gm rosemary, 16 baby onions, 200 gm potatoes, 40 gm jalapeño, 30 ml fresh cream, 120 ml red wine, 160 gm asparagus Make it Marinate lamb shanks with garlic, rosemary, salt and red wine. Keep aside for 30 minutes. Peel and boil potatoes. Roughly mash them with hand. Prepare onion confit by slow cooking onions in oil. Grill lamb shanks on a hot plate and keep for braising for next 30 minutes in a hot poaching liquor. Add fried garlic, jalapeños, onions, salt to mashed potatoes. Season well.
