There’s no one-size fits all when it comes to photography hardware, and the same is certainly true of camera settings. Cameras use different modes in order to give the photographer more, or less control over the aperture, shutter speed and ISO (among some other settings). This enables the photographer to either concentrate fully on the composition and creative choice of framing, snapping photos at the right point in time.
This also gives the photographer full technical control over how the resulting image looks, including depth of field and motion blur or sharpness.
