There’s something special about this season. It’s just so life-affirming when everything is fresh and new. Produce and flowers gradually appear out of the soil and the greengrocer’s tables are cramming full of nice, fresh, crisp vegetables. I love cooking with good, fresh ingredients, and arranging the food beautifully is almost as important as the taste. The same goes for sharing the meal with my loved ones. That’s something we’re very good at here in Denmark: Danish "hygge". At this time of the year, the gardens and the roadsides are full of flowers. Lise has been living in this town house in Kerteminde, Denmark, for 30 years and her daughters, Molly and Nora, grew up here. Throughout her entire life, Lise has been interested in old, funny bits and pieces, and that’s why recycling has always been a matter of course in her home. As an example, the tiles in the patio used to be part of the Kerteminde square and the small greenhouse was built with terrace doors found in a dumpster. Lise planted the rose in the patio 25 years ago and now it’s as big as a parasol. You can easily imagine sitting underneath this plant when it blossoms. Lise loves the vivid and typically Danish shade of blue called "madame blue" which she’s also used indoors for the dining…

One of the things that made Laila from Norway and her husband fall in love with this old smallholding from 1897, located close to the town of Løkken, Denmark, was all the original details, including the visible beams, doors and architraves. Actually, they’d like to renovate the kitchen at some point but until then, Laila has managed to furnish it in a very cozy way and she’s come to like it a lot. She even likes the dark tiles on the floor. The couple uses the house as a summer home and they love spending their weekends and holidays by the North Sea in Denmark. In the good old days, you’d find a pantry – also called a buttery – as a separate building away from the farmhouse. Mette and Jens had always dreamed of having such a place so when they renovated their farm, they decided to create one below the stairs to the second floor. A space that couldn’t be used as part of the actual kitchen anyway and an area that was already a bit cooler than the rest because the outer wall isn’t insulated. Jens built the shelving units himself and he adjusted them to make them fit this special area. Just like Yvonne and many of us, Mette feels that everything has to look cozy and be practical at the same time so she’s using lots of pots and pickling jars…

The basic concept behind Mette’s and Jens’ garden is their dream of being self-sufficient and having lots of fruit and vegetables as well as lots of flowers to eat or sell. The garden offers large volumes of delicacies that the couple eats all summer long or pickles and boils in preparation for the winter. The couple loves to sow and plant, care for the plants, harvest and prepare the food. Their children and grandchildren also benefit from this fantastic garden. They often spend time in the garden and some of them have their own garden beds and/or plants that they’re responsible for and care for all summer long.
