But to make minestrone truly special and still keep your belly full, I’ve added a few indulgent ingredients that will elevate the finished dish. We all know the saying ‘fresh is best’, but a thoughtfully stocked pantry doesn’t have to mean ‘second best’. Instead, it can provide a structure on which to build healthy meals. Whether you have a glamorous walk-in pantry or a couple of poky cupboards, it’s all about management and best storage practices. Ideally, your pantry should be cool and dark, out of direct sunlight. Opened packets should be emptied into airtight jars or containers, and if the contents aren’t immediately obvious, make sure you label them. french shallot tarts Milder and sweeter than onion, French shallots are the perfect pastry filling. Preheat oven to 200°C/180°C fan forced. Cover 500g French shallots with boiling water. Set aside for 5 minutes. Drain. Peel (halve, if large). Heat 2 tbs olive oil in a large frying pan over medium-low heat. Cook shallots, stirring, for 10 minutes or until golden. Stir in 2 tbs water, 2 tsp each balsamic and brown sugar. Season. Set aside to cool. Cut six 11cm-diameter discs from 1 1/2 sheets thawed frozen puff pastry.
