1 Preheat oven to 200C/ Gas 6. Prick 2 large baking potatoes with a fork. Measure 2tsp olive oil onto a plate, with a good pinch of salt and pepper and, one at a time, roll potatoes in mixture until completely coated. 2 Bake for 1hr until potatoes are crispy on the outside and soft in the middle.
