Mango chicken curry

3 chicken breasts, cut into chunks 400ml can reduced-fat coconut milk 1 red chilli, deseeded and sliced 1 large ripe mango, peeled, stoned and chopped 1tbsp mango chutney 1 onion, sliced 4 garlic cloves, chopped 2.5cm piece of fresh ginger, grated Handful of fresh coriander, chopped, plus extra to serve 1–2tbsp curry powder 2tbsp light soy sauce Juice of 1 lime 1tbsp cornflour, mixed to a paste with 1tbsp water 1 yellow pepper, sliced Salt and freshly ground black pepper, to taste Basmati rice, garlic naans, and lime wedges, to serve 1 Place all the ingredients, except the yellow pepper, into a slow cooker, stir and season to taste.
