The 120 recipes here, with ingredients gleaned from the landscape he lives and works in (he’s head chef at River Cottage), celebrate produce from farm, seashore, garden, orchards and woodlands, all of them seasonal and described with the elegance of a nature poem – “blue cheese with honey, thyme, dates, fried onions and seeds”, “gooseberries with smoked cod’s roe and nasturtium leaves”, “crab apple and fennel seed leather”, “spider crab with loganberries, lemon zest and fennel”.
