SOUFFLÉ OMELETTE WITH HERBED MUSHROOMS AND CHEESE
Omelettes are so quick and easy to prepare and can be filled with myriad ingredients from bacon and spinach to smoked fish, stir-fried vegetables, roasted tomatoes or cheese. For a soufflé omelette, the eggs are separated and the whites are beaten until stiff to produce a light, fluffy texture.
