How do you put a price on a bowl of fish soup? Coral reefs are among the world’s most dazzling sights. That feeling we get when snorkelling these hidden worlds rightfully puts them at the top of most traveller’s bucket lists. This 7 September marks 195 years since Brazil declared its independence from Portugal, following more than three centuries of European rule. Of course, it wasn’t until 29 August 1825 that an official treaty was signed by the two countries, but locals still prefer to celebrate the original date. I’m guessing it was a bloody affair... Before you arrive Fez may lag behind Marrakech when it comes to hip riads and sophisticated restaurants, but there’s a transformation underway.
