At Farzi. Forward., the new avatar of Farzi Café at CyberHub Gurugram, diners can dig into, among other enticements, Savoury Ghevar Chaat, Thecha Burrata Bomb, Dal Chawal Arancini, Spicy Andhra Chicken Taftan Pizza and a Naga Chilli Cheese Jalebi. That last, Zorawar Kalra, founder & managing director, Massive Restaurants Pvt. Ltd, feels “is going to be one of the most viral dishes of the country”. It looks exactly like a jalebi, but is made out of potato, isn’t sweet, and is served with a sesame and cheese dip where you might be expecting rabri. That’s a classic instance of ‘Farzification’, which Kalra explains as “the deliberate injection of something cool, something fun, something quirky, something playful, yet remaining respectful of the original dish”.
