Apricot pork SERVES 4 PREP 15 MINS COOK 1 HOUR 15 MINS 2 tbsp vegetable oil 750g pork neck, trimmed, 3cm cubes 1 onion, finely chopped 2 garlic cloves, crushed 2 tsp five-spice powder 405ml apricot nectar 1 cup chicken stock ¼ cup chopped coriander, plus extra, to serve ¼ cup flaked almonds, toasted Steamed choy sum, steamed rice, to serve 1 In a large saucepan, heat half the oil on high. Brown pork in 2 batches 3-4mins each. Transfer to a plate. 2 In same pan, heat remaining oil. Sauté onion and garlic 3-4mins until onion is tender. Stir in spice powder. Cook 1 min until fragrant. Pan-fried fish with broccoli mash SERVES 4 PREP 10 MINS COOK 15 MINS 750g potatoes, peeled, chopped 2 heads broccoli, chopped ⅓ cup milk 2 tbsp vegetable oil 4 x 200g fish fillets 50g butter, chopped 1 lemon, zest finely grated, juiced 125g cherry tomatoes, halved Snipped chives, to serve 1 In a large saucepan of boiling salted water, cook potatoes 12-15 mins until tender, adding broccoli in final 5 mins. Drain. Return to heat. Add milk, then mash until smooth. Season. 2 Meanwhile, in a large non-stick frying pan, heat oil on medium. Cook fish 2-3mins each side until cooked through.
