While it seems as if every other recipe you see for chocolate cake these days is a flourless version, step back 150 years and chocolate cake in any form was virtually unknown. Some baking with chocolate was happening in 1764, but references are scant. The chocolate cake reached mass popularity at the end of the 19th century, when Devil’s Food cake and brownies were all the rage in Chicago. Before this, chocolate cakes were usually white or yellow pound cakes or sponges with chocolate icing. The flourless cake came later.
