HUEVOS RANCHEROS JARS
Feel full with this trio of protein, fiber, and healthy fat.
SCRAMBLE 3 eggs in skillet. BLEND together 1 cup salsa verde, ½ avocado, 1 chopped garlic clove, and juice of ½ lime. DIVIDE avocado sauce between 2 widemouthed jars. LAYER in ½ cup canned pinto beans, half the scrambled eggs, ½ sliced scallion, 2 Tbsp. cilantro, and ½ cup crumbled baked tortilla chips. SEAL and chill.
