Lemon marmalade chicken

200g lemon marmalade 2 garlic cloves, crushed small knob of ginger, peeled and finely grated (you’ll need about 1 tbsp) 1 tbsp soy sauce 1 tsp sunflower oil 1 lemon, zested and juiced 8 skin-on, bone-in chicken thighs 2 spring onions, sliced on the diagonal rice and stir-fried long-stem broccoli, to serve 1 Heat the oven to 200C/ 180C fan/gas 6. Combine the marmalade, garlic, ginger, soy, oil and half the lemon juice. Arrange the chicken thighs on a baking tray lined with foil, and spoon over half the marmalade mix. Roast for 15 mins.
