Sprawling across 3,500 acres of West Susssex is the Knepp estate, belonging to the rewilding movement’s pioneer Sir Charles Burrell. Here, herds of cattle, pigs and deer roam freely against a backdrop of wild meadows and wetlands. Now available from the estate are cleverly curated boxes of meat, from the slow-cook option of hand-diced beef, fallow shanks, beef shin steak and beef silverside (from £42) to its wild charcuterie box [pictured, above], packed with slivers of fennel salami, juniper coppa and more (£38).
