BAY OF PLENTY’S NEW LUXURY ECO ESCAPE One of New Zealand’s most internationally successful ballerinas has returned home with her civil engineer husband to create a spot of luxury and solace in the Bay of Plenty. Delia (née Mathews) and Josh Harris have built a series of architecturally designed cedar-clad eco cabins powered by solar energy and rainwater on an 18ha bush-laden property set beside the Omanawa River. SUPPORTING MARINE CONSERVATION Project Kahurangi, Aotearoa New Zealand’s first free non-profit digital library, has been built to aid the work of Kiwi marine organisations by removing the barrier that marine conservation groups face in accessing high-quality visuals to tell their stories and connect people to the urgency of the issues. FEIJOA ICE CREAM Making feijoa ice cream with my cousins is something of a tradition. We first made it back in standard three (about 9 years old), using a recipe from the School Journal. BOIL-UP I’d have to say boil-up is the most staple of staples in many Māori households. It’s a hearty, wholesome and economical ‘one-pot’ meal that tastes even better the next day. It’s simple: all of the flavour comes from the meat and bones, and the sweetness of the vegetables: the only extra seasoning is salt. That’s it. Don’t try adding spices, or onions, or even garlic, or it will no longer be a boil-up. Pork or bacon bones are best for boil-up, but you can also use beef or brisket bones. And doughboys. Finding sanctuary at Sanctuary Mountain One of the few stands of ancient forest left in New Zealand, Sanctuary Mountain Maungatautari in Waikato is so special that kākāpō are set to be released here in 2023.
